You won’t believe how delicious this cauliflower pizza crust is! Clean Eating with Claudia demonstrates this healthy pizza recipe that is both a low carb pizza and a low calorie pizza.

Ingredients for the Cauliflower Pizza Dough:
1 medium head of cauliflower
2 eggs (beaten)
2 cloves of garlic (minced)
1 cup of lite shredded mozzarella cheese
1 tbsp dried oregano

Gluten Free Pizza Toppings:
1 cup of marinara or pizza sauce
¾ cup of lite shredded mozzarella cheese
½ purple onion
1 green bell pepper
¾ sliced crimini mushrooms
4-5 basil leaves for garnish (optional)

Additional Items Needed for Cauliflower Pizza Recipe:
Non-stick cooking spray
Pizza baking sheet

Preparation:
Preheat your oven to 400 degrees. Chop the cauliflower florets in the food processor or finely by hand until rice like shape is formed. Once the cauliflower is chopped, place it in the microwave for 10-12 minutes to steam. Be careful removing cauliflower from microwave, it will be HOT. Once removed, stir in the minced garlic, dried oregano, 1 cup of shredded mozzarella cheese, and the 2 eggs. Blend completely.
Once all the ingredients for the crust are combined, drop the mixture onto a pizza baking sheet that’s been sprayed with non-stick cooking spray and begin to flatten the cauliflower dough to the thickness of a thin crust pizza. Place in the oven for 10-15 or until the edges begin to brown and the crust goldens.

Toppings: (The fun part!)
Spread evenly over the cauliflower pizza crust the marinara sauce, cheese, chopped onions, bell pepper and mushrooms. Place the pizza back in the oven for an additional 20 minutes. OPTIONAL: You may add fresh basil to the pizza once removed from the oven and ENJOY!
