Clean Eating with Claudia presents another healthy dessert recipe, the oatmeal chocolate chip cookie, to fulfill your sweet tooth. The gluten free cookies recipe is easy to make and only has 6 ingredients. You won’t believe these vegan cookies only have 57 calories each.
Gluten Free Cookie Ingredients:
2 medium ripe bananas
1 cup of oat flour
1 21g scoop of vanilla or natural protein powder
1 tsp vanilla extract
1 tbsp coconut oil (melted)
½ cup of carob chips or semisweet chocolate chips
Preheat oven to 350 degrees. In a bowl mash the two ripe bananas into a puree. Once pureed, add the melted coconut oil and vanilla extract and mix completely. Add the oat flour and protein powder to the wet ingredients and continue mixing. When the wet and dry ingredients are combined, fold into the batter the carob or chocolate chips. Spoon the batter into individual cookies onto parchment paper or foil that has been sprayed with a non-stick cooking spray. Be sure to flatten the batter into the round cookie shape to ensure it bakes evenly. Bake for 12 minutes and enjoy this sweet treat!
