The cinnamon coconut sugar cookie recipe is diabetic friendly and low glycemic. </p>
<p>Healthy Cookie Recipes Ingredients:<br />
1 cup almond flour<br />
¼ cup organic butter or coconut oil (softened or slightly melted)<br />
¼ cup coconut sugar<br />
2 egg whites<br />
½ tsp vanilla extract<br />
½ tsp ground cinnamon<br />
¼ tsp baking powder<br />
3 tbsp of milk (almond/coconut/skim) if using brown rice flour<br />
About 1 tbsp of coconut sugar to sprinkle on top of cookies</p>
<p>Preheat your oven to 350 degrees<br />
In a bowl combine the dry ingredients (flour, cinnamon, sugar, and baking powder) and whisk together until combined. To the dry ingredients add the wet (butter, egg whites, extract) ingredients and mix completely until a batter is formed. If you’re using a type of dryer flour such as brown rice flour, add 1 to 3 tablespoons of a milk of your choice as needed. </p>
<p>Onto a parchment paper lined baking sheet or a sheet sprayed with a non-stick cooking spray, spoon the batter onto the sheet forming a cookie shape. The batter will yield 12-15 cookies depending on the size you make them. Bake in the oven anywhere from 12-15 minutes or until an inserted toothpick comes out dry. </p>
<p>Upon removal from the oven, sprinkle coconut sugar on each cookie and enjoy this low glycemic cookie recipe!</p>
