The egg and quinoa recipe is great for meal prepping because you can make it on a Sunday, pop it in the refrigerator, and enjoy it throughout the week.</p>
<p><a href="http://hasfit.com/healthy-recipe/breakfast-recipes/">Healthy Breakfast Recipes</a> Ingredients:<br />
½ cup uncooked quinoa<br />
1 ½ cup egg whites or 8 large eggs<br />
3 cloves of chopped garlic<br />
1 tsp of thyme<br />
2 cups of chopped baby spinach<br />
1/2 cup of shredded mozzarella cheese<br />
1 cup of milk<br />
½ cup cottage cheese<br />
Salt and pepper to taste</p>
<p>Preparation: Preheat your oven to 350 degrees</p>
<p>Whisk egg, thyme, garlic, milk, cottage cheese, and quinoa, salt and pepper together. Then gently fold in spinach. </p>
<p>Pour mixture into an 8X8 baking dish sprayed with a non-stick cooking spray and cover with foil, bake for 45 minutes. Remove cover and sprinkle cheese on top, continue baking for another 10-15 minutes or until the cheese is golden on top. </p>
