<p>Ingredients:<br />
2/3 cup raw cashews<br />
1/3 cup rolled oats<br />
1 scoop protein powder<br />
¼ cup pure maple syrup<br />
1 teaspoon cinnamon<br />
1-2 dashes of nutmeg</p>
<p>Protein Ball Recipe Directions:<br />
In a food processor or high powered blender add the cashews, rolled oats, and protein powder, blend until the ingredients take on the consistency of a course flour (about 10-15 seconds). To the mixture add the maple syrup, cinnamon and nutmeg and continue blending until all ingredients are combined. Spoon about a tablespoon of the processed mixture into the palm of your hands until a ball is formed. This recipe yields 12-15 protein balls depending on the size. Stores in the refrigerator for up to 7 days.</p>

										<content:encoded><![CDATA[<p><iframe type="text/html" width="560" height="315" src="https://www.youtube.com/embed/K-w1IA8MEp0?rel=0" frameborder="0"></iframe>In recognition of Childhood Obesity Awareness Month, <a href="http://hasfit.com/clean-eating/">Clean Eating</a> with Claudia will be sharing 4 delicious healthy kids recipes. The first in this series is the quinoa pizza bites, a healthy pizza recipe. Quinoa Recipes are high in fiber and protein.</p>
<p>Ingredients:<br />
1 cup cooked quinoa<br />
½ cup shredded fat free mozzarella cheese<br />
½ cup chopped basil<br />
½ cup chopped pepperoni<br />
1 clove of minced garlic<br />
1tsp dried oregano<br />
1 large egg<br />
½ tsp salt (optional)</p>
<p>Directions:<br />
Preheat your oven to 350 degrees<br />
Quinoa: Bring ¾ cup of water or low sodium broth to a rapid boil and stir in ¼ cup of dry, rinsed quinoa to the boiling water/broth. Once combined, drop the stove temperature to a low, cover, and simmer the quinoa for 15-20 minutes or until all the water has been absorbed. Fluff with fork and allow time to cool.<br />
Place your 1 cup of cooked quinoa in a bowl and add the egg, mozzarella cheese, minced garlic, oregano, salt (optional), pepperoni, and fresh basil to the quinoa and stir all of the ingredients together. Once mixed, take your mini muffin tin and fill the tins with the quinoa mixture packing the tins with your spoon. Bake for 15 minutes.<br />
Serve with organic marinara or pizza sauce for dipping and ENJOY your pizza bites!</p>
