<p>Pumpkin Banana Bread Recipe Ingredients:<br />
1 small to medium ripe banana (mashed)<br />
½ cup pumpkin puree<br />
1 cup oat flour<br />
1 tsp pumpkin pie spice<br />
1 scoop vanilla or natural protein powder<br />
½ tsp baking powder<br />
1 tbsp ground flax (optional)<br />
1 tbsp coconut oil<br />
2 tbsp stevia<br />
2 eggs<br />
½ tsp vanilla extract<br />
¼ cup sliced almonds or chopped pecans/walnuts<br />
Non-stick cooking spray</p>
<p>Directions:<br />
Preheat your oven to 350 degrees. In a bowl combine all of your dry ingredients (oat flour, protein powder, ground flax (optional), baking powder, pumpkin pie spice) and mix until combined. In a separate bowl, mash the banana and add all of the wet ingredients (pumpkin puree, coconut oil, eggs, and vanilla extract) mix completely. Add the dry ingredients to the wet ingredient bowl and stir until the bread batter is attained. </p>
<p>Fold into the batter the ¼ cup of almonds until evenly distributed throughout the batter. Spray a loaf pan with non-stick cooking spray and add the batter to pan pressing down on all four corners to ensure the batter is even allowing for thorough baking. </p>
<p>Bake for 40-50 minutes depending on your oven. Your bread is ready when a toothpick or knife comes out clean when inserted in the middle of the loaf. Enjoy your bread with a thin spread of your favorite nut butter or on its own!</p>
