Coconut Curry Recipe
Ingredients:
2 lbs boneless skinless chicken breasts
½ large red onion sliced
2 cup small red potatoes sliced or quartered (optional)**see note at bottom
1 cup frozen peas
1 can of light coconut milk
1 can of tomato sauce
2 tbs curry powder
1 tsp of cayenne pepper
Salt and pepper to taste
Directions:
Place chicken in the crockpot and cover with the coconut milk, tomato sauce, potatoes, and add in sliced onions.
Next add in the curry powder, cayenne, salt and pepper.
Cook on low for 6-8 hours or on high for 3 hours. About half an hour before serving, shred the chicken and add the frozen peas. Serve with pita, rice, or whatever you’d like!
**Note: In place of the potatoes I’ve also used a can of chickpeas. If you’d like, you can use BOTH!
