This delicious turkey meatball and easy quinoa recipe by Clean Eating with Claudia is a great alternative to spaghetti and meatballs. The healthy dinner recipe is gluten free, low carb, and low calorie. Baked turkey meatball recipes are great for those trying to avoid red meat.
Ingredients: 1 ¼ lb extra lean ground turkey 1 egg (beaten) 2 tbsp almond flour 1 tbsp dried parsley 1 tbsp dried oregano 2 cloves minced garlic ¼ cup finely chopped onion 1 cup uncooked quinoa 2 cups water or low sodium broth Salt and pepper to taste Non-stick cooking spray
Quinoa Preparation: Bring 2 cups of water or broth to a rapid boil and stir in 1 cup of quinoa. Note: if you’re using water, you can add a pinch of kosher or sea salt to season the water. Once you’ve added the quinoa to the boiling water, reduce to a low heat, cover, and simmer the quinoa for 15 minutes or until all the water/broth is absorbed and the quinoa is fluffy and translucent. This is also a good time to heat your pasta sauce on a low heat, cover, and simmer.
Turkey Meatball Recipe: Preheat oven to 400 degrees. In a bowl, combine into the turkey the dried oregano, parsley, onion, garlic and mix. To the mixture add the binding ingredients of almond flour and the lightly beaten egg. Add salt and pepper, about 1 teaspoon of each, and continue mixing. Once you have the ingredients well combined into the turkey, spoon about 2 tablespoons of turkey into the palm of your hands and roll into a ball. Place the rolled turkey meatball onto your baking sheet lined with parchment paper or foil (don’t forget to spray with non-stick cooking spray) and continue rolling the meatballs. This will yield about 12-16 servings depending on the size of your meatballs. Bake in the oven for 20 minutes or until cooked all the way through. *baking time may vary slightly based on your oven.
Plating: Fluff your quinoa with a fork, add fresh chopped basil and stir. Place your cooked meatballs in your heated pasta sauce and coat completely. Spoon your turkey meatballs and sauce over your serving of quinoa and ENJOY!
