After my fast apple pie oatmeal recipe, I decided that I wanted to make the same thing but on a larger scale. Oatmeal that will last me the next few days for a fast breakfast on the go and this is what I came up with!

 

I decided that I wanted to bake the oatmeal, to make it feel more like a dessert but without all the guilt. Add the healthy carbs, fruit, the fragrant fall flavor and you have yourself a breakfast that will fill you up and keep you energized.

Ingredients:

2 cups oats

1 1/2 organic apple diced

1 3/4 cup almond milk

2 eggs

1 tsp vanilla extract

1 tsp baking powder

1 tbsp apple pie spice

1/4 cup pure maple syrup

1/4 cup chopped walnuts, pecans, or almonds

8×8 baking dish sprayed with a non-stick cooking spray

Directions:

Preheat your oven to 350 degrees. In a bowl combine all of your dry ingredients (oats, baking powder, apple pie spice, and nuts) mixing them until well combined and set aside. In a separate bowl, combine all of your wet ingredients (almond milk, maple syrup, vanilla extract, eggs) mixing completely. Once the wet ingredients are mixed, add in your diced apple and continue mixing. Now, add your wet ingredients into your dry ingredient bowl and stir until well combined. Pour your oatmeal mixture into your sprayed 8×8 baking dish and bake for 40 minutes.

Apple topping:

I diced 1/2 an apple and placed it in a microwave safe bowl, added a few dashes of cinnamon and microwaved on high for 1 minute. You can microwave a little longer if you prefer softer apples.

When you’re ready to eat, cut yourself a piece and add 2 tablespoons of plain non-fat plain greek yogurt, the apple topping and a drizzle of maple syrup!

This recipe refrigerates and reheats well to last you for a few days giving you a nice warm up on those cool fall mornings. 🙂
