You are officially reading my first blog! I am blogging at you from the great state of Texas. So let’s cut right to the chase, Claudia in a nutshell: A right-handed Pisces, Mexican American baby of the family who is addicted to chocolate, is scared to death of roaches, has had braces twice, has broken a toe from just walking up a flight of stairs, and who loves to dance.

I’ve run two half marathons (Miami Beach Halloween Half in October 2012 and the Houston Aramco Half in January of 2013) and while training for the San Diego Marathon this past year, I ruptured my plantar fascia two weeks before the race and had to sit it out. Talk about being crushed! I’m just about fully recovered but have not run more than a 5K since being injured. I certainly plan to once this crazy hot summer is over.

Alright, now on to the fun stuff! I’m coming down from a pretty awesome workout this weekend. Coach Kozak and I usually have our longer, more intense workouts on Saturdays and Sundays however he really kicked our butts this weekend with a killer track workout and Sunday ended up being an impromptu off day. Moving around today was nothing short of a struggle, my entire body is SORE! We did 8 x 100m, 2 x 200m, 2 x 400m and ran the bleachers. Mind you, all of which I haven’t done since high school gym class and in this scorching Texas heat. I’m not sure how I survived but I did and I actually enjoyed it. Here are a couple of pics from our Saturday session:

The only thing that ever really gets me through these workouts is the thought of the delicious food I know I’m about to eat once the torture has ceased. The salad bar at Jason’s Deli was just what I needed!

Although Sunday was an off day, we still had a productive weekend. We filmed two recipe videos, I got a few recipe posts up on the website (this post included) and I even squeezed in some family time with my lovely mom who was visiting from out of town and my grandma.
