These healthy fudge brownies are so moist that they will literally melt in your mouth. Claudia’s healthy dessert recipe is vegan, gluten free, high in fiber, and easy to make.
Healthy Brownie Recipe Ingredients:
¾ cup maple syrup or honey
½ cup unsweetened cacao powder
½ cup coconut flour
1/3 cup coconut oil (can also use butter, mashed banana, or applesauce)
2 tbsp milk of your choice
1 tsp vanilla extract
5 flax eggs (5 tbsp ground flax + 15 tbsp water) or 5 eggs
½ tsp salt
½ tsp baking soda
Preparation: Preheat your oven to 350 degrees. If using flax eggs, combine 5 tablespoons of ground flax with 15 tablespoons of water, mix and set aside for 10 minutes.
In a bowl, combine the coconut flour, cacao, baking powder and salt. Mix until combined.
In a separate bowl, mix the flax eggs or eggs, vanilla, maple syrup, and oil until all of the ingredients are well blended. Using a hand blender, slowly pour the wet ingredients into the dry ingredients and mix until a batter if formed and no lumps remain.
In an 8×8 baking dish lined with parchment paper or sprayed with a non stick cooking spray, pour the batter into the dish and bake for 25-30 minutes. Once done, cool completely as to allow the brownies to set and enjoy!
